This is the recipe for the healthy bread, quick and easy tomake. The bread may be toasted or used just as it is, with some soups or otherfood. It could be breakfast bread, or used as a sweet, with some jam or peanutbutter on.
Baking of this bread doesn’t require so much time as bakinga yeast loaf. It is much less time consuming. Also, you might want to make adouble measure and then freeze some for future use.
You will need: 2 cups of whole wheat flour, 1 and a half cupof rye flour and half of a teaspoon of salt. Salt can be thrown out of the breadmixture, if you don’t want to use it.
Mix all of the dry ingredients together. Add half of a cup ofmolasses to dry mixture and stir. 2 teaspoons of baking soda dissolve in 2 cupsof buttermilk and 2 tablespoons of olive oil add it also to the mixture andthen stir well until all of the ingredients are well combined. Add one tablespoon of a dulse flakes (dulse isa seaweed, and it can be bought in most large groceries).
Preheat the oven to 350 degrees (Fahrenheit). Prepare thebread dish (9x5x3 inches) and grease it well. Pour the bread mixture into the loafpans and bake them for an hour in the oven. You could also use 3x5 mini breadloaf pans. Those need 30 minutes of baking and you will get 4 mini loaves.
After the baking leave in the pan to rest for about 10 minutesand then remove the bread. It can be used immediately but (if you can) let itcool down just a bit more, it will taste better.
Freezing the Bread
Let the bread cool down completely before putting it into aplastic bag. Then just put the bag into the freezer and freeze it. When you need to defrost, let it stay outsidethe freezer for several hours or use microwave defrost setting.
This is the variation of a recipe called “Puckerbrush bread”.This bread was made in remote parts of land, in Puckerbrush, and that’s how thebread got the name. The recipe was changed in order to be healthier: instead ofwhite flour here we have whole wheat flour, and molasses instead of added sugar.Dulse flakes are not affecting the taste, but are great source of iron,especially for little kids.
If you want to make sweet bread, add half of a cup of brownsugar, and a milk and sugar glaze over the top of the bread.
You can change more ingredients if you like: use graham orany other flour, according to your taste, add fruits, fresh or dried or chopsome nuts and add them to the bread mixture.
