In another bowl stir 2 mashed bananas with ½ of a cup of soymilk, ¼ of a cup of safflower oil, and ¾ of a cup of honey. Add all to drymixture and stir, and then add 1/3 of a cup of roughly chopped nuts.
These muffins should be baked in the oven too, at 400degrees, some 15 to 20 minutes.
Lemon Blueberry Muffins
Preparation time: 30 minutes
Mix 2 cups of whole wheat flour, 2 teaspoons of baking powderand some sea salt in a mixing bowl. In a smaller bowl stir juice of one lemonand a tablespoon of lemon zest, a third of a cup of milk, 1 beaten egg and 3 tablespoonof safflower oil. Combine dry ingredients with this mixture, add a cup of freshor frozen blueberries and lightly stir.
The mixture should be baked in the oven, at 400 degrees, for20 to 25 minutes.
