These can provide a lovely snack for your child. If the consumer has wheat allergies then you can swap the whole wheat flour for spelt flour. If raspberries are not for your taste you may substitute the raspberries with either blueberries, blackberries or even raisins.
Raspberry Muffins Ingredients
You will need one cup of five hundred milliliters of rolled oats; one cup of buttermilk of the same amount; one cup of flour again of the same amount; three quarters of a tea spoon of sea salt; one and a half tea spoons of aluminum-free baking powder; half a cup of melted butter measuring at one hundred and twenty five milliliters; half a cup of Sucanat or Rapadura sugar or honey; one egg that has been beaten a little; one tea spoon of lemon zest; and one cup of fresh raspberries.

You need to pre heat the oven to four hundred degrees Fahrenheit and grease a muffin pan or you can line it with muffin cups if you have them. Now you can combine the oats and the buttermilk in a bowl and let it soak for around ten minutes or so. In another bowl, you can sift the flour and mix in the salt and the baking powder and then put the bowl to one side. Now in another bowl you can beat the egg, sugar and the butter so it becomes fluffy, at this point you can add the lemon zest and then fold the mixture in with the oat mixture as well as the flour mixture.
Now it is time to gentle fold in the raspberries and then you can begin to fill up your muffin cups about two thirds of the way with the mixture, this can then be baked for about fifteen minutes or so. To check to see if it is cooked you can insert a knife into the middle of a muffin and it should come out very slightly damp, but only slightly. When it is compete you can remove the muffins from the oven and set on a wire rack to cool for a while before you serve. This recipe should alow for twelve muffins in total.
