Potatoes can be used in a variety of ways, jacket potatoes, mashed, chips, boiled, the list is practically endless.
Spring Sheppard’s Pie Ingredients
This is a change to the normal mash on top of a pie and will serve four to six people. You will need five hundred grams of minced beef, a peeled and chopped onion, two chopped up cloves of garlic, some sunflower oil, one can of chopped up tomatoes, one hundred milliliters of wine, Worchester sauce, a pinch of dried out herbs, two table spoons of tomato puree, five hundred grams of new potatoes that are scrubbed but not peeled skin, and fifty grams of cheddar cheese that is grated.
Spring Sheppard’s Pie Directions
You will need to pre heat the oven to one hundred and eighty degrees centigrade after your meat has been in the pan for half an hour. Now you can start to prepare the rest. Firstly you can put the onion into a pan with a little sunflower oil for around five minutes, after which you can add the meat and continue to stir. After a short while you can incorporate the wine, tomatoes, tomato puree, herbs, and the Worchester sauce. Allow the heat to come to a simmer and let it sit uncovered for approximately an hour. While you are waiting you can boil the potatoes for fifteen minutes, drain and then you can leave them to one side to cool. After the hour has elapsed for the meat it can be transferred to a glass dish. Now that the potatoes has cooled down you can slice them so they are around o.5cm in thickness and put a layer of them on top of the meat. On top of the potatoes you can sprinkle the cheddar cheese and then place the dish in the middle of the oven and bake for about half an hour or until the cheese has softened and started to brown.
Potato, Spinach and Mackerel Salad
You will need five hundred grams of salad potatoes, three hundred and fifty grams of smoked mackerel, one hundred grams of spinach leaves, and three table spoons of green pesto, the juice from one lemon and three table spoons of olive oil. You need to boil the potatoes for fifteen minutes. After that you can break them up generally in a bowl with the flaked mackerel and the spinach. You can now add the lemon juice, pesto and the oil together to make a dressing and pour it over the salad.
