Information on Mayonnaise
Mayonnaise is a creamy, thick dressing or sauce and its ingredients commonly include oil, seasonings, egg yolks, vinegar and lemon juice. It is different from all the other types of salad dressings as it does not contain any egg yolks. Sixty five percent of mayonnaise is made up of oil and if stored in the refrigerator, could stay fresh for up to six monthes.
Mayonnaise Preparation and Uses
Mayonnaise is an emulsion which means that it is actually a mixture of two different types of liquids which are very hard or impossible to combine, because they get separated without the addition of an emulsifier. The most commonly used emulsifiers are gelatin, mustard and eggs, and in the case of mayonnaise the emulsifier is actually the egg yolk. Egg yolk contains lecithin which is known for its potent emulsifying properties. Mayonnaise always has a creamy color but its ingredients may vary from country to country. The French mayonnaise always contains mustard, while the Spanish mayonnaise always contains olive oil. It is not uncommon for mayonnaise to be enhanced by numerous spices and herbs such as garlic or French tarragon. Mayonnaise is quite often used as a very good base for other types of salad dressings and sauces. During the preparation of mayonnaise one should always add the oil to the other ingredients in a very patient manner, literally drop by drop. If one adds too much oil in a short amount of time, the liquids will not be combined properly.
