Lentils are one of the most protein-rich legumes around, and they've also got fibre, folate, vitamin B1, and iron. It's no wonder lentils are a true favorite among vegetarians. Here's how to make a tasty Greek lentil soup, with very few ingredients!

Ingredients

500 grams of brown lentils Five large cloves of garlic (or less according to taste) One large onion Olive oil Salt and pepper to taste

How to make the soup

Start off by soaking your lentils for two hours. After the two hours are up, strain the water and bring your lentils to the boil in one and a half liters of new water. Once your water is boiling, let the lentils simmer for an hour and a half. Meanwhile, chop your onion up into fine pieces. Fry them slowly in a generous amount of extra virgin olive oil, together with the garlic. Make sure to keep the heat medium to low, so the onion will caramelize instead of burn.

Once your onion is translucent, you empty the contents of your skillet into the simmering pan with lentils. Add salt and pepper to taste, and after an hour and a half, your soup will be ready. Mind you, the longer your soup stands (within reason), the more flavor it will have.

You'll end up with quite a thick soup, that is nutritious and filling. Traditionally, this soup is eaten with a couple of slices of bread. You could also make a Greek salad with tomatoes, feta cheese, onion and cucumber to go along with the soup and give it a fresh taste.
