About Greek cuisine
Greek cuisine is very similar to Mediterranean diet. It is full of exotic flavours, fresh ingredients and tasteful marinades. Also Greek cuisine is very healthy and it uses lots of fresh fish, olive oil, low fat meat and fresh vegetables. Mediterranean diet is one of the healthiest, and it reduces risk factors of various diseases significantly. Also studies shows that Greek cuisine, as a part of Mediterranean diet, being high in monounsaturated fats like olive oil and low carb is much more efficient for weight loose than other diets.
Greek cuisine has very little saturated fats, limited amounts of protein per day and plenty of plant foods. Greek cuisine also includes fresh local food minimally processed like cereals, nuts, pasta, fruits, seeds, legumes, plenty of vegetables, olive oil and whole grains, and lesser amount of meat, poultry, diary, and eggs.
Greek lifestyle is not just food and wine; they also have a plenty of daily physical activities, and the results are that rates of heart diseases, obesity and diabetes type 2 are among lowest in the world.
Here we will describe several of the recipes of Greek cuisine.
Marinade Magic
Marinades can add to any grilled food amazing taste. Almost any type of meats can be marinated in advance and then refrigerated for a period of up to one week.
For garlic-basil marinade we will need 1 sliced green onion, 1 tsp of sugar, 2 cloves of minced garlic, 2/3 cup of white wine vinegar, 1/3 cup of olive oil and 2 tbsp of fresh and chopped basil. You should pour marinade over meal you choose like fish or poultry in a shallow dish, and put it at the refrigerator. Leave it there to marinate for 5 hours for poultry or 1 hour for fish.
Greek Salsa
For this dish we will need 1 cup of finely chopped tomatoes, 1/4 cup of finely chopped zucchini, 1/4 cup of finely chopped cucumber, 2 tsp of olive oil, 2 Tbsp of white wine vinegar and 1/4 cup of chopped ripe olives.
Stir together in a bowl olive oil, vinegar and the salad dressing mix, after that add olives, tomato, zucchini and cucumber.
Grilled Greek-Style Turkey Burgers
For this burgers you will need 5 tsp of Italian salad dressing mix, 4 whole toasted wheat pita breads, one egg, 1 tbsp of milk, 1/3 cup of bread crumbs, 1 lb of lean uncooked chicken or turkey, 1 recipe Greek Salsa (see above) and 1/4 of cup of crumbled feta cheese.
Take the bowl and mix milk, egg white, half of the salad dressing mix and bread crumbs, then add turkey and mix well. Shape the mixture into four 3/4-inch-thick patties and grill patties on the rack of an uncovered grill directly over medium fire for 20 minutes or until done.
