The only negative with beef is that it takes a long time to cook well, so it is best to prepare beef when the person is not rushing anywhere, usually the weekends are best for beef.
This recipe calls for two pounds of rolled brisket of beef, two shallots, four cloves of garlic, two carrots, two bay leaves, one teaspoon of fresh or dried thyme leaves, ten small baby potatoes, two handfuls of fresh rocket leaves, four cups of mushrooms, two tablespoons of horseradish, salt/freshly ground black pepper.
The beef, shallots, garlic, carrots and herbs need to be placed into a soup pan, after which boiling water needs to be added in order to covert the beef, but without reaching the tip of the pain.
The general rule for brisket is that it needs to be cooked for about 40 minutes per pound and another 40 after.
In this preparation, it would probably be best to cook it for about two and a half or three hours.
Once it is cooked, remove the beef from the pan and let the contents of the pan cool overnight, because they will be use for the stock soup later. Once the beef has cooled, shred it into small strips and salt them, but make sure to drain them well also. Then add the rest of the ingredients into the mix, season the combination and serve the healthy meal.
