Definition and Origin of Pu Erh Tea

Pu-erh tea is one of the best kept Chinese secrets. It has traveled for centuries with traders and nomads. Pu erh is one of the oldest and most complex teas. As Pu-erh tea is getting old it develops the old sweet, rich flavor and earthy aroma. It comes in many forms: pressed or shaped leaves by hands or machine or in cubes or balls of all sizes. Pu-erh tea is made of subspecies of Camellia Sinesis genus called Dayeh. It is divided into green and oxidized Pu-erh. In green Pu-erh drying is performed only partially to allow slowly leaves oxidizing over time. Oxidized Pu-erh is darker because of the initial oxidation before drying. Taste of these dark teas improves with time, but its changing is less than in the green Pu-erh. Pu-erh tea is often stored in underground caves or special rooms.
