3 large Potatoes, scrubbed and cut into wedges1 tablespoon of oil1 tablespoon of Paprika
and for Tomato Salsa
4oz (150g) Cherry Tomatoes (chopped) ½ of a small Red Onion (chopped) 1 tablespoon of fresh chopped Parsley
Cook the potato wedges in boiling water 5 minutes and drain them. Preheat the grill in the mean time. Toss together potatoes, oil, paprika, and place on a foil. Grill approximately five minutes until they turn crispy and golden. To prepare a tomato salsa, mix the ingredients together. Serve the wedges on a plate with the Salsa in a dipping bowl.
