
Have you ever heard of Nigerian food? Most people in the western hemisphere or North America have not but we are familiar with other foods from the African continent such as Moroccan foods. If one looks at the vast expanse of the African continent and its huge land mass divided into so many countries each one different in itself pertaining to language, culture and diet. The major impact on Africa is the number of times it has been invaded and its subsequent colonisation over centuries has had a strong influence on its traditional food. Of course trading with many other countries in Europe and further afield has changed their culinary tastes over the millennium such as Indian food especially in the south of the continent whilst in the north the influence is more from the middle East and Asia. However if you look at West African food you will notice that this area retains the most traditional cuisines as the influences of the western world has had the least impact. Throughout its long history we can see that West African (along with Nigeria) foods have had a major impact on many parts of the world. It has changed culinary tastes that are similar to such cooking associated with Creole and Cajun in a number of countries from the West Indian islands and especially South America. However, much of the West African cuisines remain unknown to the rest of the world. It is a sad fact and hard to understand why this is so as the cuisines produced having such diversity and exotic flavors and are certainly good nutritionally. The good news is that due to a global community that we now live in, many people for West Africa and in particular Nigeria has migrated into Europe and America. This settling of West Africans in these countries has thrown up ethnic restaurants that produce Nigerian cooking. What all of these points to is that the time is right to make an advancement to encourage our food to the height where it can become a number one foreign exchange earner. It is in addition the right time to produce more optimistic awareness to elucidate bias and misconceptions about our food. And generate opportunities to give confidence to their trial. With this steady flow of people from West Africa into the West, now is the time to move to the lead to bring the consciousness to all, allowing these wonderful cuisines to produce foreign money.
